Our family doesn’t do Easter baskets. To us, too many holidays revolved around sweets and treats, and the holiday itself can lose its meaning. Our Easter tradition is to go to early church service on Easter, and then we head to an amazing brunch, where we talk, laugh and eat ourselves to the point that a nap is required.

Belk Grand Opening at Galleria Dallas Benefits Susan B Komen

Rio Star Grapefruit & Quinoa Salad

Did you know that red grapefruit is state fruit of Texas? Texas Red Grapefruit are sweet, juicy and tree-ripened, literally stored on the tree to peak of perfection. Rio Star combines the two reddest varieties – Rio Red and Star Ruby grapefruit. It has an overall blush on the exterior peel with a deep red interior color which is 7 to 10 times redder than the Ruby Red. Rio Star grapefruits are in season from late October to early May.

Ingredients
1 Texas Rio Star Grapefruit, sectioned
1 Texas Orange, sectioned
8 thin slices fresh ginger
1/4 cup extra-virgin oil
3/4 cup quinoa
1/2 tsp kosher salt
1 Tbsp white wine vinegar
2 tsp honey
1 small serrano pepper, minced (with seeds for maximum heat)
2 scallions (both white and green parts), minced
2 carrots, peeled and diced
2 Tbsp chopped fresh cilantro leaves (substitute parsley if you don’t like cilantro)
Freshly ground black pepper
PeelingRioStar Strip the peel from the grapefruit with a vegetable peeler, taking care not to include the bitter white pith. Warm the grapefruit peel, ginger, and olive oil in a small saucepan over medium heat. As soon as the oil starts to bubble, after about 2 minutes, remove from heat. Set the oil aside to steep for 30 minutes. Strain and reserve the oil.
Quinoa Meanwhile, rinse the quinoa in a bowl and drain. Put the quinoa in a small saucepan with 1 1/2 water and 1/2 teaspoon salt. Boil over high heat, and then reduce heat to maintain a gentle simmer and cook, uncovered, for 15 minutes. Set aside off the heat, undisturbed, for 5 minutes. Transfer the quinoa to a bowl and fluff with a fork. Cool.

Segment the grapefruit over a bowl, reserving the segments and juice separately. Whisk 3 tablespoons of the grapefruit juice with the vinegar, honey, and salt to taste in a medium bowl. Gradually whisk in 3 tablespoons of the reserved grapefruit oil, starting with a few drops and then adding the rest in a stream to make a slightly thick dressing. Season with pepper to taste.

Toss quinoa with the dressing, chiles, scallions, carrots and cilantro. Season with salt and pepper, to taste.GrapefruitQuinoa

This is a great dish to get your kids in the kitchen! My daughter at first said that she didn’t like grapefruit. That was until she made this dish and tasted it. Now, I have a Texas grapefruit fan. 🙂

Ingredients
2 Rio Star Grapefruit, sectioned
2 Texas Oranges, sectioned
1 cup fresh pineapple chunks
1/2 cup brown sugar
2 Tbsp butter, softened

In a medium bowl, combine grapefruits, oranges and pineapple. Transfer to a 1-quart broiler-safe casserole dish or ramekins. In a small bowl, mix brown sugar and butter; sprinkle over fruit. Broil 4-inches from heat for 5 to 6 minutes until sugar is bubbly and fruit is warmed. Serve warm.WarmCitrusBake

Journey Under the Sea with Dallas Summer Musicals

In a magical kingdom fathoms below, we meet Ariel, the little mermaid (played here by Chelsea Morgan Stock) who is tired of flipping her fins and longs to be part of the fascinating world on dry land. Joining her are Sebastian (Alan Mingo, Jr.), Ariel’s crabby sidekick. She defies her mighty father, King Triton (Steve Blanchard) to pursue the handsome human Prince Eric (Eric Kunze). To do so she must enlist the aid of Ursula (Liz McCartney), the evil sea witch, who transforms Ariel’s fish tail into human legs — but at what price?LittleMermaid_Photo1.SMjpg I’m not going to give you any more plot. If you want to know more, go see the musical. If you cannot get enough, rent Disney’s The Little Mermaid movie. My family was invited by the Dallas Summer Musicals to be entertained by The Little Mermaid showing now until March 2, 2014 at Music Hall at Fair Park, and we laughed and sang to familiar songs.

This production is more unique than other Dallas Summer Musicals productions because it is not a part of a national tour. It was produced here in Dallas! The story focuses on Ariel’s feelings of being an outsider in her own family. It also emphasizes King Triton and his relationship with his daughter Ariel – and was less about the love story. Triton learns how important it is to support Ariel in her dreams and tries hard to understand her. Now, this is such a timeless tale. I know my husband doesn’t want to think about this day when our daughter leaves home.

I should add that my daughter performed in this musical last summer. Here’s she is as a pink flamingo performing in the number “Kiss the Girl.”Pink Flamingos
