Celebrate National Waffle Day on August 24

Bacon-Cheddar-WafflesCelebrate National Waffle Day on August 24th with two of the greatest ingredient: BACON and CHEDDAR CHEESE! This recipe from FamilyFun Magazine offers the perfect combination of savory and sweet.

INGREDIENTS
2 cups flour
2 Tbsp sugar
1 Tbsp baking powder
½ tsp baking soda
1¾ cups milk
6 Tbsp unsalted butter, melted
2 large eggs, beaten
1 cup shredded cheddar cheese
4 strips cooked bacon, crumbled

1. Heat oven to 200°F and preheat the waffle iron. In a medium bowl, help kids measure out and whisk together the flour, sugar, baking powder and baking soda. In another bowl, whisk the milk, melted butter, and eggs until incorporated.

2. Stir the wet ingredients into the dry ingredients until combined, then stir in the shredded cheese and crumbled bacon.

3. Pour about ½ cup batter onto the center of your waffle iron and cook until golden and fluffy. Transfer the waffle to a baking sheet and keep warm in the oven. Repeat with remaining batter. Serve with maple syrup.

Recipe: Egg and Lemon Soup from Albania

With the colder, rainy weather lately, I have been enjoying chili and soups more. I thought that I would share this tasty egg and lemon soup (supa od jaja i limona), which I recently ate at Restaurant Shqiponja in Shkodër, Albania. This soup is popular in Albania, and it is delicious to enjoy when you are wanting to stay warm at your grandmother’s house or trying to get well with a winter cold. You could modify the recipe by adding chopped chicken to the soup. This soup is comfort food that is amazing on a cold winter day because it adds warmth and a bit of sunshine to your day! 🙂

Egg and Lemon Soup // Supa od jaja i limona

egg-lemon-soup800ml chicken broth // 800ml pileći bujon
4 eggs // 4 jaja
2 freshly squeezed lemons // sok od 2 limuna
3T butter // 40g maslac
3T flour // 30g brašno
salt and white pepper // so i bijeli biber
parsley // peršun

Melt butter in a pot and then add flour to make a roux. Add chicken broth and simmer for 10 minutes. In the meantime, beat eggs in a large bowl and add all of lemon juice and season with salt and white pepper. Take the broth off the heat, and while constantly stirring, add the broth mixture into the bowl with lemon and eggs. Then sieve the soup and leave on low heat for one minute while stirring constantly. Garnish and serve with parsley leaves.

Brunch

Breakfast Casserole is my easy Christmas dish that we enjoyed many years with my family! This year will be no different. Fortunately, I have the recipe on hand when I go shopping and when I prepare the night before Christmas. 😉 This is also great for holiday brunches at your in-laws or church potlucks.

Main Course

Honey-baked Ham is our family’s traditional meat on Christmas. Since we are stuffed from turkey on Thanksgiving, and we eat lamb on Easter. A sweet ham goes perfect for our Christmas feast. Its spiral slices make it easy to served and an attractive presentation at the dinner table. We think Petit Jean Honey Cured Ham is the best we’ve ever tasted.

Sides

Broccoli Casserole is what my mom used every Christmas when I was little. We kids could never get enough! It was our very favorite Christmas vegetable. If you have children, or have some coming to visit, I guarantee that they will eat and enjoy this veggie side dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It’s fabulous with a Christmas ham and twice-baked potato too. Be sure to use sharp Cheddar cheese for a nice full flavor!

Twice Baked Potatoes are great to make ahead of time! They’re extra yummy because extras like butter and cheese are mixed in. For variety, sprinkle top of potatoes with real bacon pieces just before serving.

Desserts

Apple Pie has to be the classic dessert for Christmas. I have yet to meet someone who does not enjoy a slice of the pie. Add cinnamon and the pie becomes perfection. It is quick and easy and ensures a perfect result every time. Use a combination of Granny Smith apples and Honeycrisps apples for the best filling, eating apples don’t soften the same way.

Chocolate & Peanut Butter Chip Pretzel Cookies takes your chocolate chip cookies to the next level. Why should Santa get the best chocolate chip cookies?! When baking chocolate chip cookie recipe, I am a stickler for using one stick of butter at room temperature AND the combination of brown sugar and granulated sugar which gives the cookies terrific flavor. And do not use a scooper—the tool compacts the cookies too much.

Pair this hearty side dish with chicken, pork or pasta and discover the savory flavor of Cookwell & Co.’s Better Than Good Bacon Jam. Ingredients
1 bag Brussels Sprouts, end trimmed and halved
1 medium yellow onion, diced into 1/4 in pieces
1 clove garlic, chopped
2 Tbsp. Extra Virgin Olive Oil
1/2 tsp salt
1/2 tsp black pepper
1/2 jar Better Than Good Bacon Jam

Preheat oven to 375°F. Place Brussels sprouts, onion, garlic, oil, salt and pepper in a medium bowl and toss or stir to combine and coat.

On a foil lined baking sheet spread out sprout mixture in a single layer. Roast in oven for 30-35 minutes. Sprouts should be fork tender but not mushy.

Rio Star Grapefruit & Quinoa Salad

Did you know that red grapefruit is state fruit of Texas? Texas Red Grapefruit are sweet, juicy and tree-ripened, literally stored on the tree to peak of perfection. Rio Star combines the two reddest varieties – Rio Red and Star Ruby grapefruit. It has an overall blush on the exterior peel with a deep red interior color which is 7 to 10 times redder than the Ruby Red. Rio Star grapefruits are in season from late October to early May.

Ingredients
1 Texas Rio Star Grapefruit, sectioned
1 Texas Orange, sectioned
8 thin slices fresh ginger
1/4 cup extra-virgin oil
3/4 cup quinoa
1/2 tsp kosher salt
1 Tbsp white wine vinegar
2 tsp honey
1 small serrano pepper, minced (with seeds for maximum heat)
2 scallions (both white and green parts), minced
2 carrots, peeled and diced
2 Tbsp chopped fresh cilantro leaves (substitute parsley if you don’t like cilantro)
Freshly ground black pepper
PeelingRioStar Strip the peel from the grapefruit with a vegetable peeler, taking care not to include the bitter white pith. Warm the grapefruit peel, ginger, and olive oil in a small saucepan over medium heat. As soon as the oil starts to bubble, after about 2 minutes, remove from heat. Set the oil aside to steep for 30 minutes. Strain and reserve the oil.
Quinoa Meanwhile, rinse the quinoa in a bowl and drain. Put the quinoa in a small saucepan with 1 1/2 water and 1/2 teaspoon salt. Boil over high heat, and then reduce heat to maintain a gentle simmer and cook, uncovered, for 15 minutes. Set aside off the heat, undisturbed, for 5 minutes. Transfer the quinoa to a bowl and fluff with a fork. Cool.

Segment the grapefruit over a bowl, reserving the segments and juice separately. Whisk 3 tablespoons of the grapefruit juice with the vinegar, honey, and salt to taste in a medium bowl. Gradually whisk in 3 tablespoons of the reserved grapefruit oil, starting with a few drops and then adding the rest in a stream to make a slightly thick dressing. Season with pepper to taste.

Toss quinoa with the dressing, chiles, scallions, carrots and cilantro. Season with salt and pepper, to taste.GrapefruitQuinoa

Grapefruit Ramen Salad

Texas Citrus is sweet, juicy, delicious and, most important, at the peak of the season! This salad is refreshing and full of texture!

Ingredients
4 cups torn fresh spinach
4 cups broccoli slaw
6 green onions, thinly sliced (tops included)
3/4 cup red wine vinaigrette
1/2 tsp freshly ground black pepper
3 Texas Rio Star Grapefruit, 1 juiced and 2 sectioned
1 package Ramen noodles, lightly toasted and broken
1/4 cup sesame seeds, lightly toasted
GrapefruitRamenSalad In a large bowl, toss together spinach, slaw and onions, then chill.

In a small jar, shake together salad dressing, pepper and 1/4 cup of grapefruit juice (refrigerate remaining juice for another use.), then chill.

This is a great dish to get your kids in the kitchen! My daughter at first said that she didn’t like grapefruit. That was until she made this dish and tasted it. Now, I have a Texas grapefruit fan. 🙂

Ingredients
2 Rio Star Grapefruit, sectioned
2 Texas Oranges, sectioned
1 cup fresh pineapple chunks
1/2 cup brown sugar
2 Tbsp butter, softened

In a medium bowl, combine grapefruits, oranges and pineapple. Transfer to a 1-quart broiler-safe casserole dish or ramekins. In a small bowl, mix brown sugar and butter; sprinkle over fruit. Broil 4-inches from heat for 5 to 6 minutes until sugar is bubbly and fruit is warmed. Serve warm.WarmCitrusBake
