Wild King Salmon with Grilled Pineapple Relish
Ingredients
5 or 6 fresh pineapple slices, about 1-inch thick
2 Tbsp red onion, minced
1 garlic clove, minced
1 tsp freshly grated ginger
lime, if needed
Sea Salt
8 to 10 fresh basil leaves, shredded as thinly as possible
1 to 1 1/2 lbs King salmon fillet
Prepare a fire in an outdoor grill. When hot, grill the pineapple until it just begins to take on some color, about 3 to 4 minutes per side. Transfer to a plate and let cool until easy to handle.
Cut the pineapple into small dice and put it into a medium bowl; add any juices that collected on the plate while the pineapple rested. Add the onion, garlic, ginger and a pinch of salt. Stir well and taste; if the mixture is too sweet or a bit flat, add a squeeze of lime juice and another pinch of salt. Add shredded basil. Cover and refrigerate until ready to use.
Season the salmon lightly with salt and grill over medium heat, skin side up, for about 7 to 8 minutes, rotating each piece once to mark it.
Turn the salmon over and grill, skin side down, for about 2 to 3 minutes more for fillets that are 1-inch thick, adjusting accordingly for thinner or thicker fish.
To serve, set the salmon on top of cooked brown rice, add a generous spoonful or two of pineapple salsa on the salmon. Bon appetit!
