Tomato Zucchini Frittata
Easy brunch dish that will satisfy the whole family!
TomatoFrittata Ingredients
1 zucchini, sliced
1 cup chopped green onions
2 cloves garlic, chopped
1 can RED GOLD DICED TOMATOES with BASIL, GARLIC & OREGANO, drained
1/4 tsp black pepper
6 eggs
1 cup Mozzarella cheese, shredded

Preheat oven to 350-degrees. In an oven-safe skillet, saute zucchini, green onions and garlic. Cook for 5 minutes or until tender. Add RED GOLD DICED TOMATOES with BASIL, GARLIC & OREGANO and black pepper. Cover and heat until zucchini is tender.

In a small bowl, beat eggs. Pour over vegetable mixture and sprinkle with cheese.

Bake until eggs are set and a knife inserted in the center comes out clean, approximately 10 to 15 minutes. Cut into wedges to serve.
